Recipe Friday!

I made the best salsa last night I needed to share it!

Most people get a long nice weekend and the best thing to do on weekend nights is to sit on the porch drink in hand eating homemade salsa! Can you think of anything more refreshing? Haha

So I kind of cheat when I make salsa, I buy the spice packets it saves a bit of time!


























First thing you should do is cut slits in your tomatoes and pour boiling water on them, this will help you remove the skin. It isn't necessary but I like to do that so the salsa is more saucy and not just big chunks.

I then cut an onion, I prefer the taste and color of red onions. I chop it really small so it's easier to eat. Light a candle when you do this it helps! I swear I "cried" for ten minuets and I literally couldn't open my eyes without searing onion pain lol

I then add garlic, chopped small because garlic is the best thing ever. This isn't needed though.

Then you add the spice packet to taste, don't dump it all in because it is beyond flavorful!!

Then refrigerate for a little while if you can wait ;) so the flavor blends. But it tastes great either way!

Check it out, it made a ton with three tomatoes!! Soooo good!

We devoured a whole bowl yesterday!

My Gingham Obsession Continues

I am almost to a combined 100 followers I am soooo excited, thanks to all the recent followers it means so much!

I am planning a few giveaways coming up and I am beyond excited! So look out for those!

I am cracking up right now realizing I am and never will be a model! What's up with all my shots of my backside? Bahah this is what happens when the hubs refuses to take pictures of me :(

I love my Gingham shirt! It is my new best friend, I am so happy I spent the money on it!

Also I totally made my skirt, it only took me a year to finally finish but I did it just in time for summer! I just followed a pencil skirt I had and sewed up both sides and put in elastic...sooo easy!

This is really geeky of me but I just started my tests to get Quickbooks certified yesterday and I am really excited! Have any of you heard of QB or use it at work? If you have any questions I will be a certified trainer in a few weeks! haha sorry for my geekyness but I really am excited!

Southern Food

I want to preface my Pinteresting Wednesday post by saying, Southern Food is No Joke!

I loved all the food we had on our trip!

I am not a big fan of seafood but I ate a lot and loved it soooo much better than Michigan Seafood.

Below are a few recipes to some of my favorite things that we had in NOLA!

1. Black Beans & Rice You wouldn't think this could be good, or I didn't, but really it was amazing! The best combination I have had in a long time!



2. Crawfish: I did not eat these...gross. But my husband loved them so I thought I would share a recipe if any of you actually have access to crawfish I am pretty sure they aren't sold in Michigan, and that's ok by me ;)



3. Poboys: We had a poboy just about everyday and they were soooo good! The best flavor by far is shrimp! A shrimp sandwich is beyond good!



4. Beignets: I am sure most have heard about this breakfast deliciousness! You can get them a couple of places but the best is cafe dumonde! Soooo good!


5. Crab Cakes: We had these one night, and although they were not my favorite at Copelands they did sound so good and you can get them everywhere!!

We are planning on going back to NOLA in the future, we have been there twice now and it really seems like a second home it is such an inviting city! So if you have restaurant suggestions let me know ;)

Nola Take Two!

Can I just say how amazing this dress is?

 It kept me pretty cool in the New Orleans heat! And I got a little color :)

I love the color of the dress, its the perfect pop of color!

 And like always my hair is braided...when its hot out that is the best way to wear my hair, cute and cool.

Coolest story ever. We saw Mathew McConahey (sp?)

We were just walking along in the Garden District and we passed the most adorable little boy!

We were all awing over how cute he was, the hubs said really loud "that is one fly little boy!"

Then there is a little girl and we do the same.

Well after we walk by my friend says she thought it was Matthew Mcconahey, well non of us looked up except her.

When we got back we cruised twitter and figured out we walked right past him at Sucre!

Crazy funny that we only noticed the famous man's kids I am sure that made him smile!

Ive Got Vacation Ending Blues

I'm back!

Thanks to all the great guest bloggers who posted while I was away!!

I am so exhausted! I feel like I'm jet lagged even though we drove...

I can't wait till I can sit down and get caught up on all the blogging :)

We did so much in NOLA it was a blast!!

I'll share more details later but I thought I'd share my favorite outfit of the trip, im sporting it again today :) this dress is so comfortable and the lace is the cutest detail!
